Beer Goggles: How a Michelin-star brewpub presages the future for craft beer

For most craft brewers, the future looks small and local. They just need to be convinced of it.

There are times when even I wonder if the craft niche of the beer industry is as small as it appears to be. I hear the numbers routinely: According to the Brewers Association, craft beer was 12.2% of the beer industry by volume in 2015. However, of the 4,269 breweries that existed that year, Brewers Association economist Bart Watson says 91.8% made 7,500 barrels or fewer. In fact, 90% produced 5,000 barrels or fewer.

We’re now up to more than 5,000 breweries in the U.S.
